What is Yamayuki Bluefin Belly?
This is fresh wild bluefin tuna belly (腹一番 / harakami) from Aomori and Miyagi, selected by Yamayuki — a tuna vendor whose inspectors cut into each fish to verify quality by taste and texture rather than judging by appearance. Yamayuki supplies over 1,000 premier sushi establishments in Japan, including some of Tokyo's most prestigious restaurants. This belly section is 8–10 lbs, yielding both chu-toro and o-toro.

The belly is the fatty underside, where the finest cuts come from — o-toro (大トロ) at its richest, chu-toro (中トロ) in balance. The fat here is refined and delicate, dissolving gently on the palate, and even the leaner parts carry depth and umami, free of tough sinew or off odors. It's fresh, never-frozen wild tuna at restaurant grade, ready to break down into your own cuts.

How to enjoy

A belly section gives you both otoro and chutoro from one piece. Slice against the grain for sashimi, or lay it over rice for nigiri, where the fat melts as you eat it. A light sear (aburi) suits the fattier otoro. It needs little more than soy and wasabi. As a large piece, it portions into several servings — slice only what you'll eat and keep the rest cold and sealed.
