What is Pure Salted Uni?
Pure Salted or Tsubu Uni is a traditional preparation of fresh sea urchin from Hokkaido, salted and aged in sea salt alone. The result is a deeply concentrated, complex umami — far richer than fresh uni — with a creamy texture and a clean salinity that lingers.

Hokkaido Uni Shop is the only US source bringing this product directly from Hokkaido. Production is limited to 4–5 boxes per week, owing to the rarity of the raw material and the careful hand-preparation required.

How to enjoy

Best served simply: a small portion over freshly steamed rice, or alongside a glass of cold sake. The intensity of the salt and umami means a little goes a long way.
