What is Toro Sawara?
Toro sawara is winter sawara (鰆, Spanish mackerel) from Japan — the fattiest, most flavorful season for this fish. Sourced and processed entirely in Japan, it comes as two loins, lightly seared and ready to eat after a simple thaw, much like katsuo tataki without the preparation. Winter sawara has no off or fishy taste, which makes it a clean, refined choice. Each pack is about 2.0 lbs.

The written character for sawara (鰆) joins fish and spring, but winter is when it carries the most fat — kan-zawara, the cold-season fish, is the prize. The belly-rich loins have a soft, melting quality closer to toro than to a lean white fish, and the light sear on the surface adds aroma while the inside stays raw.

How to enjoy

It's already seared, so thaw and slice — no cooking needed. Serve it tataki-style, cut against the grain, with ponzu and grated daikon, or with soy and wasabi. Grated ginger, scallion, or a squeeze of sudachi suit the richness. Lay it over warm rice for a seared-sawara donburi, or serve as sashimi and nigiri. Thaw in the refrigerator and use raw preparations the day it's thawed.

Pairing notes — ponzu and grated daikon, soy and wasabi, ginger, scallion, and sudachi.

Thawing: Ships frozen, pre-seared and ready to eat. Thaw in the refrigerator before serving; do not thaw at room temperature or refreeze after thawing. Use raw preparations the day it's thawed, and keep cold until serving. A pre-order item that usually takes about a week to prepare. Any transit damage should be reported to the carrier directly.
