What is Tezumi olive oil?
Tezumi (手摘み) is an extra-virgin olive oil from Toyo Olive on Shodoshima — the island in Kagawa where olive growing in Japan began over a century ago. It's made from 100% Shodoshima-grown olives, hand-picked (which is what tezumi means). The flavor is mild and rounded rather than sharp or peppery. It comes in a 200ml bottle.
That mildness is deliberate. Where many extra-virgin oils lead with a strong, bitter, grassy bite, this one is made to suit Japanese cooking — gentle enough to finish miso soup, simmered dishes, and other washoku without overpowering them. Use it raw as a finishing oil, the way you'd use a good extra-virgin, but on Japanese food as much as Western.

How to enjoy
