A favorite in high-end Japanese cuisine, Taira Gai shines as sashimi where its delicate sweetness and crisp bite can fully express themselves. It also works beautifully lightly grilled for a deeper savory profile, or thinly sliced for sushi. Best consumed within 1–2 days of arrival. Available winter to spring.
