What is Sujiko?
Sujiko (筋子) is salmon roe still in its natural membrane sac, a traditional Japanese delicacy. Unlike Ikura (individual eggs), Sujiko is the whole skein of eggs connected by thin membranes. It's typically salt-cured or marinated in soy sauce and offers a firmer texture than Ikura. Sujiko is prized for its authentic presentation and is often enjoyed during autumn when salmon return to spawn.
