What is Sudachi?
Sudachi (酢橘) is a prized Japanese citrus, small and green, known for its sharp acidity and refreshing aroma. It's smaller and tarter than yuzu, with a character all its own — where yuzu is floral and rounded, sudachi is bright and cutting. It's harvested at its peak from September to December. Each pack holds 9–10 pieces.
Sudachi is used less for its flesh than for its juice and fragrance: a squeeze over hot food lifts it instantly. It's a classic finish for grilled fish, hot pot, soba, and sashimi, a base for ponzu and dipping sauces, and its zesty aroma also carries into cocktails and condiments.

How to enjoy
Cut in half and squeeze the juice over food just before eating — grilled fish (especially sanma), sashimi, tempura, soba, udon, and hot pot. Use it in place of lemon or lime anywhere you want a sharper, more fragrant note. The juice makes a bright ponzu, and thin slices float well in drinks. A little goes a long way.
