Uni from Rishiri Island is among the most celebrated in Japan, known for its clean, elegant sweetness and unmatched quality. Sourced during a brief fishing season—June to August for Bafun Uni and June to September for Murasaki Uni—this product is considered one of the pinnacle offerings in the Uni world.

The secret lies in the waters. Nutrient-rich spring water flowing from Mount Rishiri nourishes the surrounding ocean, creating an ideal environment for sea urchins to thrive. Each Uni is carefully evaluated using seven internal criteria: color, size, shape, dryness, surface condition, freshness, and taste. Based on this assessment, trays are ranked from Regular (1-Toku) to the top tier: 5-Toku, which corresponds to this AAA selection.
