What is Ora King Salmon?
Ora King is a farmed king salmon (chinook) raised in New Zealand, known for its high fat content and heavy marbling. The flesh is deep orange, run through with white fat lines, and the texture is buttery and smooth — chefs often compare it to toro for how it melts on the tongue.

That marbling is what makes it a sashimi-grade salmon rather than an everyday one. It's richer and cleaner than standard farmed salmon, with none of the muddiness that can come with it. Each portion is about 1.0 lb and yields roughly a dozen sashimi slices.

How to enjoy

It's at its best raw. Slice against the grain for sashimi, lay it over rice for nigiri, or serve as crudo with citrus, olive oil, and salt. The high fat also takes well to a quick sear on the skin side or a light torch (aburi), which softens the fat further. Keep it cold and use raw preparations the day it's opened.

Pairing notes — soy and wasabi, citrus and ponzu, sea salt and olive oil, and a dry sake or sparkling wine.
