What is Ora King Salmon?
Ora King salmon from New Zealand is widely regarded as the world's finest farmed salmon, raised in clean coastal waters using sustainable methods. With approximately 25% fat content, it delivers a rich, buttery texture and a delicate flavor that sets it apart from other salmon. Its vibrant color, clean taste, and melt-in-your-mouth quality make it a choice sought out by fine dining chefs around the world.

That high fat is what makes it a sashimi-grade salmon rather than an everyday one — richer and cleaner than standard farmed salmon, with heavy marbling through the flesh. Each fillet is approximately 5.5 lbs.

How to enjoy

It's at its best raw — sliced against the grain for sashimi, or as crudo with citrus, olive oil, and salt. The high fat also takes well to a light sear on the skin side or a torch (aburi), which softens it further. It needs little more than soy and wasabi, or a squeeze of citrus. As a full fillet, it gives you several cuts from one order. Keep it cold and use raw preparations the day it's opened.

Pairing notes — soy and wasabi, citrus and ponzu, sea salt and olive oil, and a dry sake or sparkling wine.

Handling: Keep refrigerated and use raw preparations within a day or two of arrival; thaw frozen fillets in the refrigerator before use. Slice only what you'll serve and keep the rest cold and sealed. This is a pre-order item and usually takes about a week to prepare. Any transit damage should be reported to the carrier directly.
