What is Ogawa AA Bafun Uni?
Ogawa (小川) is an established uni producer in Hokkaido whose uni is used by local chefs. This is their Bafun uni (馬糞雲丹) at AA grade, in a 150g tray — hand-selected each morning by the producer after the day's catch is shucked. The color is a vibrant orange.
Bafun uni runs to a concentrated, intense sweetness (甘味 / amami) with a deep umami — richer and more pronounced than the lighter, creamier Murasaki. The 150g size makes it a smaller portion than the full trays, available year-round rather than only in summer.
