What is Nami A Uni?
Nami (並) is a solid mid-tier grade of uni — sorted from the Hokkaido daily auction, where our team selects from over 1,000 trays each morning. Its flavor is close to the higher Jo grade; the main difference is color, not taste. Made with no alum and no preservatives, so what you taste is pure uni, nothing else.

If Jo is the most popular grade in Japan, Nami is the value pick just below it — nearly the same eating experience for less. It can be Bafun (concentrated, intense) or Murasaki (lighter, creamier) depending on the day. Available year-round.

How to enjoy

Eat it fresh and plain to taste the sweetness — straight from the tray, over warm rice as a uni donburi, or on sushi and gunkan. It's also a good everyday grade for uni pasta and other cooked dishes. Its flavor (甘味 / amami and umami) needs nothing more than a little fresh wasabi or a few grains of salt. Keep it cold until the moment you serve it.

Pairing notes — warm rice, fresh wasabi, sea salt, nori, uni pasta, and a dry sake.

About handling: No alum and no preservatives, so use within 3 days of arrival. Do not freeze; freezing breaks the texture and the uni cannot recover. Refrigerate immediately on receipt. Hand-selected at the Hokkaido auction each morning; pre-order, and stocks reflect each day's catch.
