What is Namataki Hotate?
These are wild scallop adductors (帆立貝柱) from the Sea of Okhotsk, gently simmered by the namataki (生炊き) method. Wild scallops move freely on the seabed, which gives the muscle a firmer body than farmed. Caught and cooked while fresh, they're simmered slowly to hold their shape and keep the scallop's natural sweetness and umami rather than boiling it out.
Unlike raw or frozen scallops, these are already cooked and shelf-stable — ready to eat straight from the box, no thawing or preparation. They come in a wooden gift box of 24 pieces.

How to enjoy
Eat them as they are — straight from the box, with sake or green tea. They also work over warm rice, in ochazuke, chopped into fried rice or pasta, or as a topping for salads. Because they're already simmered and seasoned, no cooking is needed; just open and serve.
