What is Miyabi Dai?
Miyabi Dai is a premium brand of tai (鯛, red sea bream) from Kumamoto, raised with minimal medication. It's known for a clean aroma and deep umami with no fishy aftertaste, and for a firm yet tender flesh that works both raw and cooked. The careful, low-medication farming gives it a clean flavor that comes close to wild-caught. This is a whole fish of around 7 lbs.

Tai is one of the most celebrated fish in Japan — the fish of celebrations, since medetai (auspicious) echoes its name. As a farmed brand, Miyabi Dai gives a reliable, year-round supply of that quality, without the swing in condition a wild fish can have.

How to enjoy

Tai is a versatile fish. Raw, it's classic as sashimi and nigiri, clean and firm, and kelp-curing (kobujime) deepens the flavor. Cooked, it takes to salt-grilling, a whole-fish sea-bream rice (tai-meshi), a simmered kabuto-ni from the head, and a clear soup (ushiojiru) from the bones and collar. As a whole fish, it gives cuts for several of these from one order. Thaw frozen fish in the refrigerator and keep it cold.

Pairing notes — soy and wasabi, kombu, salt, sudachi or yuzu, dashi, and a dry sake.

Handling: Ships fresh or frozen depending on supply; thaw frozen fish in the refrigerator. Keep cold and use raw preparations only if sashimi-grade, the day it's ready. A pre-order item that usually takes about a week to prepare. Any transit damage should be reported to the carrier directly.
