What is Kishu Binchotan?
Kishu binchotan (紀州備長炭) is Japan's premier white charcoal, made in the Kishu region of Wakayama by traditional methods. This 15kg pack is the round "Maru" (丸) form, with high carbon content and a long burn. Binchotan burns at a steady, high temperature with very little smoke, which is why it's the charcoal of choice for yakitori, yakiniku, and traditional Japanese grilling.

The clean burn is the point. Because it gives off almost no smoke or odor of its own, it brings out the flavor of the food without adding any chemical or smoky taste — just clean, radiant heat. It's the same charcoal used for grilling unagi and in the tea ceremony, and it holds its temperature far longer than ordinary briquettes.

How to use

Binchotan is dense and takes longer to light than ordinary charcoal — start it on a gas burner or with a charcoal chimney, and give it time until it glows evenly. Once lit, it holds a steady, high heat for hours, ideal for grilling close over the coals. Let it burn down fully to white-hot before cooking. It can often be reused: quench, dry thoroughly, and relight.

Uses — yakitori, yakiniku, grilled unagi and fish, robatayaki, and the tea ceremony.

Safety & handling: For outdoor or well-ventilated use only — burning charcoal gives off carbon monoxide, so never use it in a closed indoor space. Light it with care and keep it away from anything flammable. Store somewhere dry, as charcoal absorbs moisture. Any transit damage should be reported to the carrier directly.
