What is Kinome Miso?
Kinome (木の芽) is the young leaf of the sansho tree — Japan's spring herb, with a green, peppery aroma. The leaves are ground and folded into miso to make a fragrant paste, with a touch of spinach added for color. The result carries the scent of spring directly to the plate.
A traditional Japanese kitchen staple, Kinome Miso is the classic dressing for bamboo shoots in spring, and works equally well with grilled fish, tofu dengaku, and lightly cooked vegetables.

How to enjoy
Use directly as a dressing — toss with blanched bamboo shoots, spring vegetables, or tofu. For grilled dishes, cook the protein first, brush a thin layer of Kinome Miso on top, then briefly char under heat to bring the aroma forward.
