What is Kaneshin Pink Box?
Kaneshin sorts its uni into three boxes by type: Black for Nemuro Bafun, White for Murasaki, and Pink for Rishiri Bafun. This is the Pink Box — Bafun uni (馬糞雲丹) from Rishiri Island in northern Hokkaido, graded Tokujo AA (特上). The color is a vibrant orange, the flavor dense and concentrated with a clean finish.
Rishiri uni feed on the kelp beds around the island — the same Rishiri kombu used for top dashi — and the summer harvest is when that diet shows most in the flavor: the sweetness (甘味 / amami) reaches its peak and the umami runs deep. Bafun uni runs to a concentrated, intense sweetness, richer than the lighter, creamier Murasaki. This is a summer-only box, available only during the short Rishiri season.

How to enjoy
Eat it fresh and plain to taste the sweetness — as sashimi, on sushi, or as gunkan over rice. Its concentrated Bafun flavor (甘味 / amami and umami) needs nothing more than a little fresh wasabi or a few grains of salt. Keep it cold until the moment you serve it.
Pairing notes — warm rice, fresh wasabi, sea salt, nori, and a dry or sparkling sake.
