What is Kamasu?
Kamasu (梭子魚) from Oita is a prized sushi fish, celebrated for its distinct flavor and delicate texture. The kamasu chosen for sushi are the small ones, typically under 1 lb — far more refined than the larger fish. Peak season runs fall to winter, when the flesh is at its most flavorful, with a clean, slightly sweet taste and a beautiful silver skin. Each piece runs about 0.5 lb.

How to enjoy

Salt-grilling is the everyday classic — kamasu shioyaki, the skin crisp and the flesh soft. For sushi, it's often served yaki-shimo (the skin seared with a torch or flame while the flesh stays raw), which brings out the aroma of the silver skin, or as light sashimi and nigiri. Its soft flesh keeps the treatment simple. Keep it cold and cook or serve it fresh.
