What is Hanaho?
Hanaho (花穂) is the flower bud of the shiso plant, harvested just as the buds open. It carries a light herbal aroma — close to shiso leaf, but more delicate — and is used in Japanese cuisine as a finishing garnish on raw fish and seasonal dishes.
A traditional garnish in Kaiseki and omakase service: the buds are scraped from the stem onto sashimi or sushi just before serving, releasing a faint shiso scent as they meet the fish.

How to enjoy
Use as a finishing garnish, placed on the plate just before serving. To use, hold the stem and scrape the buds downward with the back of a knife, scattering them over sashimi, sushi, or a seasonal small plate. A small amount is enough — the aroma is the point, not the volume.
Pairing notes — Sashimi (especially white fish and uni), nigiri sushi, chilled tofu, clear soup. Works best on plates where the fish or broth is the focus.
