What is Hashiguchi Hamachi?
Hamachi (ハマチ) is Japanese yellowtail, a fixture of sushi and sashimi. This one comes from Hashiguchi Farm on Goto Island in Nagasaki — the single farm we source from, chosen after tasting through many suppliers. The flesh is pale, rich, and buttery, with a clean finish.

Hamachi is prized for its fat: it's softer and richer than a leaner yellowtail like hiramasa, which makes it melt more on the tongue. Each loin runs about 1.5 lbs and yields roughly 25 sashimi slices — enough for a full table.

How to enjoy

It's at its best raw — sliced against the grain for sashimi or laid over rice for nigiri, where the fat comes through. The richness also takes well to a quick sear or light grill on the skin side, and to aburi with a torch. It needs little more than soy and wasabi, or a squeeze of citrus. Slice only what you'll eat and keep the rest cold.

Pairing notes — soy and wasabi, citrus and ponzu, grated ginger, and a dry sake.

Thawing: Ships frozen. Thaw in the refrigerator before use; do not thaw at room temperature or refreeze after thawing. Once thawed, use raw preparations within 1–2 days. Any transit damage should be reported to the carrier directly.
