What is hachimitsu umeboshi?
Umeboshi (梅干し) are Japanese plums salted and pickled until sour. This version is sweetened with honey (蜂蜜 / hachimitsu), which softens the sourness and gives it a mellow, fruity taste. The plum is Kishu Nanko-bai (紀州南高梅), known for thin skin and soft, juicy flesh.
It's the mildest of the umeboshi styles — far less sharp than a plain salt-and-shiso version — which makes it easy to eat on its own with tea rather than only as a seasoning. Made without additives.
