What is Genso Wakame?
Genso Wakame (原藻わかめ) is wakame in its original whole form — the leaf, stem, and mekabu (root cluster) intact, salted at harvest with no drying or further processing. Unlike the bright green wakame found in most stores (which has been blanched and dehydrated), Genso Wakame keeps its raw brown color and a thicker, snappier texture with the salt-marine scent of the coast.
Sanriku, off the northeast coast of Honshu, is one of Japan's most known regions for wakame — its waters produce a leaf with a clear marine aroma and a firm bite. When briefly blanched in hot water, the brown color shifts to bright green, signaling it's ready to eat.

How to enjoy
Prep: Soak in water to remove the salt, then drain. The wakame is ready to use raw or cooked from this point.
Shabu-shabu or sashimi style: Briefly dip in hot water until the color turns bright green, then chill in cold water. Serve with ponzu or grated ginger soy.
Stir-fry: Holds up to heat well — sauté in sesame oil, finish with shirasu or other small fish.
Miso soup: Add directly to the broth; the wakame contributes its own dashi as it cooks.
Pairing notes — Ponzu, grated ginger, sesame oil, shirasu, fresh tofu, light dashi. The leaf, stem, and mekabu each have a different texture — try them separately to find what you prefer.
