What is Fresh Hamachi Round?
This is a whole, sashimi-grade hamachi (ハマチ, yellowtail), processed by the ikejime method (asa-jime, morning-kill) just before shipping for peak freshness. Ikejime (活け締め) reduces stress on the fish at harvest, preserving its quality and giving hamachi that's superior in freshness and texture. Each round is a minimum of 10 lbs.

This is a whole fish for professionals — restaurants, sushi chefs, or serious home cooks who want to break down their own cuts. From one round you get the loins for sashimi and nigiri, the belly (harami) for its richer fat, and the collar (kama) for grilling. It's a fish to start from scratch with, not a ready-to-plate portion.

How to enjoy

Break the round down into loins, belly, and collar. The loins slice against the grain for sashimi and nigiri, where the fat comes through; the belly is richer and takes well to a light sear (aburi); the collar (hamachi kama) is best salt-grilled. Because it's ikejime and shipped fresh, the flesh stays firm and clean for raw work. Keep it cold, break it down as needed, and use raw cuts within a day or two.

Pairing notes — soy and wasabi, citrus and ponzu, grated ginger, salt for the kama, and a dry sake.

For professional use: A whole round — it requires butchering and the cold storage to handle a fish this size, and isn't intended as a ready-to-serve portion.
