What is Fresh Hamachi Fillet?
This is a premium fresh hamachi (ハマチ, yellowtail) fillet from Japan, processed by the ikejime method to keep its clean flavor and firm, tender texture. Ikejime (活け締め) is a traditional Japanese technique that minimizes stress on the fish at harvest, which gives a better flesh quality and keeps it fresher longer. This fillet is 3.5 lbs.

Hamachi is prized for its fat, softer and richer than a leaner yellowtail, so it melts on the tongue. The ikejime handling is what lets a fatty fish like this stay clean and firm rather than going soft, so it holds up beautifully raw. As a fillet, it's ready to slice with no whole-fish butchering.

How to enjoy

It's at its best raw — slice against the grain for sashimi or lay it over rice for nigiri, where the fat comes through. A light sear on the skin side or a torch (aburi) suits the richness, and it grills or glazes teriyaki-style just as well. It needs little more than soy and wasabi, or a squeeze of citrus. As a fillet, slice only what you'll serve and keep the rest cold and sealed.
