Hadate Uni is widely regarded as one of the most prestigious Uni brands in Japan. Known for setting record-breaking auction prices, Hadate has long been sought after by professional buyers and top-tier sushi establishments. Only the most experienced Uni experts are typically able to secure it at market.

Sourced exclusively from Hakodate, Hadate uses only top-quality Murasaki Uni, selected for its pale yellow color, larger size, and exceptionally creamy texture. This style of Murasaki Uni is sometimes referred to in the market as “Shiro Uni” due to its refined appearance and richness. A single tray is generous enough to satisfy two diners, or one dedicated Uni enthusiast.

Among Hadate offerings, the highest-ranked selections—often placing within the top three at auction—are known as “Special Hadate.” These represent the very top tier of Uni quality and are produced in extremely limited quantities. Availability depends entirely on daily auctions, and fulfillment cannot always be guaranteed.

Each morning, our Uni processor in Hokkaido carefully evaluates available trays and selects only those that meet strict standards for color, texture, freshness, and taste. Orders are shipped fresh and chilled directly to your doorstep.

Best enjoyed as sushi, sashimi, chirashi, or gunkan maki. Keep refrigerated and consume promptly. Do not freeze.
