What is this Whole Bluefin?
This is a whole farm-raised bluefin tuna from Takashima in Nagasaki, cultivated in the nutrient-rich waters off Kyushu and known for its clean flavor, beautiful color, and texture. A whole fish of roughly 150 lbs, it carries every cut — otoro (大トロ) and chutoro (中トロ) from the belly, akami from the back, and the prized collar and cheek — in one bluefin.

Even the leaner cuts show depth and umami, free of tough sinew or off odors, and the fat dissolves smoothly on the palate. Grown over several years with careful feed management, Takashima bluefin is prized for its consistency in size, color, and taste. A whole tuna at this size is a centerpiece — for a restaurant, an event, or a tuna-cutting (maguro kaitai) ceremony.
