What is Bara Uni?
Bara (バラ) is loose or broken uni — the same uni as the higher grades, just not held in perfect tray form. It's sorted from the Hokkaido daily auction, where our team selects from over 1,000 trays each morning. The flavor is the same; only the presentation differs. Made with no alum and no preservatives.

Because it isn't sold on looks, Bara is the most versatile — and best-value — grade. Where the top trays are meant to be eaten as-is, Bara is made for cooking: folded into pasta, stirred through rice, blended into sauces, or used anywhere uni flavor matters more than perfect shape. It can be Bafun (concentrated, intense) or Murasaki (lighter, creamier) depending on the day.

How to enjoy

Bara shines in cooking. Fold it into hot pasta off the heat for uni cream sauce, stir it through warm rice, blend it into a butter or cream sauce, or spoon it over sushi and gunkan where shape doesn't matter. It's also fine raw — the flavor is there — but its value is in the kitchen. A little goes a long way.

Pairing notes — pasta, warm rice, cream and butter sauces, egg dishes, and a dry sake.

About handling: No alum and no preservatives, so use within 3 days of arrival. Do not freeze; freezing breaks the texture and the uni cannot recover. Refrigerate immediately on receipt. Hand-selected at the Hokkaido auction each morning; pre-order, and stocks reflect each day's catch.
