What is Akamutsu?
Akamutsu (赤鯥), better known as nodoguro (のどぐろ, blackthroat seaperch), is one of Japan's most prized fish — often called the "toro of white fish" for its exceptionally high oil content and rich umami. This is the frozen version, the same premium fish at a more accessible price, so you can keep it on hand and cook it any time. Each piece is about 500g, though sizes vary — the larger pieces are the fattier, richer ones.
Nodoguro carries its fat evenly through the flesh, so it stays moist and rich however it's cooked, without the dryness of a lean white fish. Frozen, it's an easy way to have a high-end fish ready for an everyday grilled dinner. Autumn through winter is its peak.

How to enjoy
Thaw in the refrigerator, then cook. Salt-grilled (shioyaki) is the classic — salt the fish and grill until the skin crisps and the fat runs, served with grated daikon and a squeeze of sudachi or yuzu. It's also excellent steamed, simmered in a nitsuke, or glazed teriyaki-style. The even fat keeps it moist through any of these. A rich fish, so it needs little more than salt or a simple sauce.
