What is Hon Wasabi?
Hon Wasabi (本わさび) is the real Japanese wasabi root, ground into paste and frozen to preserve its character. Unlike horseradish-based pastes sold as wasabi, real wasabi has a clean, mild heat and a fresh aroma that complements fish and shellfish rather than masking them.

Kaneku is a known maker of Hon Wasabi in Japan. We bring this product in on a pre-order basis — lead time is typically about a week from order to arrival, depending on availability from the source.

How to enjoy

A small amount alongside sushi, sashimi, Wagyu, or uni. Defrost only the portion you'll use that day — do not refreeze after thawing.

Pairing notes — Pairs well with clean-flavored fish (bluefin tuna, hirame, sea urchin). Avoid heavy soy or sauces; let the wasabi sit beside the fish, not on top.
