Sourced from our home in Hokkaido, Gokujo AAA Uni represents the highest grade available at daily auction — selected from over 1,000 trays each morning. Gokujo (極上) means "exceptional quality" in Japanese, and it's the top tier in the auction grading system: AAA, AA, A+, A, and regular. Only Uni that meets strict standards for color, shape, sweetness, and texture earns this grade. It's also called Mutenka (無添加), meaning additive-free — no alum or preservatives are used because only AAA-grade Uni can hold its shape naturally. You taste pure Uni, nothing else.
