Our First Tuna Show in Texas
Share

On September 18, Hokkaido Uni Shop iniated our very first Tuna Event which brought The Tuna Show to Freestone Lake & Golf Club in Fairfield, Texas. It was the opening night of their three day member guest tournament, and we were honored to be part of it.
The setting could not have been better. A clubhouse right on the lake, the course glowing in the late afternoon, and a sunset that made everyone stop and take a picture.

Leading the night was Chef Nobu, one of the most experienced sushi chefs in New York. He flew in to Texas fresh from serving more than 1,000 pieces of sushi at the US Open, and went straight to work. The star of the night arrived on ice. A whole bluefin tuna, rolled into the room in front of the guests.

Then our chef stepped up and made the first cut. The room went quiet, phones came out, and everyone moved in closer to watch. Piece by piece, the tuna was broken down right there, and within minutes it was on the plates as fresh nigiri and sashimi.

Tuna was only the beginning. Guests also enjoyed A5 Wagyu, seared under the flame, Wagyu tartare topped with caviar, and premium Japanese melon to finish.

What we will remember most are the faces. The first bite, the surprised look, the thumbs up from across the room. That is exactly why we do this.

Thank you to the Freestone team for welcoming us, and to everyone who came out that night. Texas, you were amazing.
