What is Tokishirazu?
Tokishirazu (時知らず) — often called the "A5 Wagyu of Salmon" — is a rare and luxurious wild summer salmon caught off the pristine coast of Rausu, Hokkaido (Shiretoko). Unlike ordinary autumn salmon, Tokishirazu is harvested before the spawning season, allowing it to retain all its rich natural fat. The result is incredible marbling, especially in the belly (harasu), with a buttery texture and sweet, clean flavor that melts on the tongue. A staple on the menus of Japan's top chefs, this approximately 4lb fresh wild-caught salmon is a once-a-season treasure.
