Often called the "A5 Wagyu of Salmon," Tokishirazu is a rare and luxurious variety of wild summer salmon caught off the pristine coast of Rausu, Hokkaido. Unlike ordinary autumn salmon, Tokishirazu is harvested before the spawning season, allowing it to retain all its rich, natural fat. The result? Incredible marbling, especially in the belly (harasu), with a buttery texture and sweet, clean flavor that melts on the tongue.
This elite seasonal delicacy is celebrated in Japan for its balance of richness and elegance—making it a staple on the menus of top chefs, just like A5 Wagyu. Whether grilled to golden perfection or served raw as sashimi, Tokishirazu delivers a refined umami experience that seafood lovers and gourmets won't forget.
