What is Kitamurasaki uni?
Kitamurasaki uni (北紫雲丹) is a Murasaki-type sea urchin from Hakodate. It runs larger than most other Japanese uni, and its taste is distinct from Bafun uni — creamier and sweeter, with a light texture that melts on the tongue.
It's a summer uni: the season is when the sweetness (甘味 / amami) is at its fullest and the umami runs clean and deep. Murasaki uni leans toward a rounded, creamy sweetness rather than the concentrated intensity of Bafun, which makes it the gentler, more delicate of the two.

How to enjoy
Eat it fresh and plain to taste the sweetness — straight from the tray, over warm rice as a uni donburi, or on sushi. Its creamy, rounded flavor (甘味 / amami and umami) needs nothing more than a little fresh wasabi or a few grains of salt. Keep it cold until the moment you serve it.
