The name Shimaaji is derived from the words "shima," which means "striped," and "aji," which means "jack." The vast majority of restaurants utilize farmed shimaaji because it is raised with exceptional attention to detail and in pristine waterways. The flavor of shimaaji is described as being similar to that of kanpachi and saba (mackerel) (greater amberjack, like leaner yellowtail).

It has a very sensitive flesh that is airy and buttery, and there is very little fat in it. When it is in its peak freshness, it has a crisp consistency and finishes with hints of sweetness. The typical weight of the items we stock is three pounds each.
