It indicates the fish was caught locally and wild, as opposed to farmed Aji, which is more common and considerably less interesting. Wild Ji-Aji has firmer flesh, more complex flavor, and a slightly oily richness that makes it a staple of high-end sushi and omakase menus across Japan.
