Ji-Aji (地鯵) is wild-caught Horse Mackerel from Japan — and the "Ji" prefix is everything. It indicates the fish was caught locally and wild, as opposed to farmed Aji, which is more common and considerably less interesting. Wild Ji-Aji has firmer flesh, more complex flavor, and a slightly oily richness that makes it a staple of high-end sushi and omakase menus across Japan.
At serious sushi counters, Ji-Aji is served as nigiri or sashimi with grated ginger and scallion — a combination that highlights the fish's clean, refined flavor without overpowering it. Availability is seasonal and subject to catch.
