Meichi Dai is a rare gem among Japan’s coastal reef fish, prized locally for its exceptional flavor. Though not commonly found in large quantities, it is increasingly spotted in top markets like Toyosu due to growing demand from chefs who recognize its unique value.
Despite being a white-fleshed fish, Meichi Dai boasts a surprisingly high fat content—especially around the skin and organs—which gives it a rich, sweet taste that rivals or even surpasses other white fish like madai (red sea bream), hirame (flounder), and suzuki (sea bass), especially from summer to fall.
Its premium fat gently rises like pearls when dipped in soy sauce, sweetening the sauce itself. When in peak condition, Meichi Dai is best enjoyed raw—sashimi is the ideal preparation to experience its delicate sweetness and umami-rich profile.
