Kohada (小鰭), or Gizzard Shad, is one of the most iconic and technically demanding fish in Edo-style sushi — a luminous silver-scaled fish prized for its sublimely tender flesh and rich umami. The skill required to cure and prepare Kohada is considered a benchmark of a sushi chef's mastery.
