Using fresh salmon as raw material, salt and rice jiuqu are used and slowly aged. There is no odor peculiar to fish sauce, and the richness, aroma, and umami enhance the taste of the dish. You can use it as soy sauce in the same way as ordinary soy sauce. Also, if you use it for fried rice, stir-fry, pots, and soups, the taste of dashi will be added to the dish and it will be delicious.
