Hokkaido Uni Shop is proud to introduce Hamo, one of Kyoto’s most celebrated summer delicacies, sourced from the warm seas south of the Kii Peninsula. Known for its elegant white flesh and high fat content during peak season (June–July), Hamo is a staple of traditional Kaiseki cuisine.
Carefully prepared using the Ike Jime technique, our Hamo retains optimal freshness and quality. The fish is expertly honegiri (bone-cut), a precise method that makes this bony eel suitable for various dishes.
