Hokkaido Uni Shop is proud to introduce Goma Saba, a flavorful regional mackerel from the waters of Iwate. Known for its rich taste and tender flesh, this variety is especially prized in Sanriku and other parts of northern Japan.
Unlike regular mackerel, Goma Saba has a slightly firmer texture with a subtle reddish hue in the meat, balanced by fine marbling. Despite its delicate skin and soft bones, it holds up beautifully to heat and remains moist and flavorful when grilled or simmered. The season can vary by region, but the best catches typically come from late summer through spring.
This fish is available as both fresh and ikejime (brain-spiked for quality preservation), with the highest quality pieces often sold under the name kubiore-saba.
