Kawahagi (皮剥), or Japanese Filefish, is a specialty fish prized at high-end sushi counters for its firm, subtly sweet flesh and clean flavor. The name literally means "skin peeler" — a reference to the fish's tough, sandpaper-like skin that must be removed before eating, revealing pristine white flesh underneath.
What makes Kawahagi truly special is its liver — rich, creamy, and intensely flavored, it is traditionally served alongside the sashimi as a luxurious accompaniment. Mixing a small amount of liver into soy sauce before dipping the sashimi is the classic way to experience Kawahagi at its best.
