Hokkaido Mentaiko is a local specialty produced by Takemaru Shibuya Suisan (竹丸渋谷水産) in Hokkaido, using a secret seasoning and flavoring method that brings out the natural taste of the fish roe. Unlike Hakata Mentaiko from Fukuoka, this Hokkaido version has its own distinct character — a product of Hokkaido's cold-water cod and a proprietary preparation that has made this brand an A-list item among local seafood lovers.

This mentaiko wasfresh and high quality. The only dislike is the saltiness. I can understand to preserve, salt is necessary but I boil it quickly for use in onigiri. It changes the texture but saltiness is educed. I still enjoy thiis mentaiko in variety of cooking.
