What is Hirame?
Hirame (平目, Japanese flounder) is a white fish used widely in sushi and sashimi. The flavor is clean and subtle with a slightly sweet finish, and the flesh has a fine, firm texture that slices thin — which is why it's a standard for nigiri and usuzukuri (paper-thin sashimi). This is a wild-caught whole fish, about 2.5–3 lbs.
Hirame changes with the season: firmer and leaner in winter, when it's at its peak, and softer in the warmer months. The winter fish, sometimes called kan-birame, is the one most prized for sashimi.

How to enjoy
Hirame is at its best raw. Its firm flesh slices thin, so it's ideal for usuzukuri — paper-thin sashimi served with ponzu — as well as nigiri and carpaccio. The engawa, the muscle along the fin, is a prized cut with more bite and richness. A light touch is enough: ponzu, a little citrus, or soy and wasabi.
