Because it has a taste that is much cleaner and less briny than the other Uni, it is the ideal Uni for beginners and those people who are new to Uni but still want to enjoy the flavors of fresh uni.

What is Mutenka Uni?
The name "Mutenka Uni" is frequently used interchangeably with "AAA Uni." The word "Mutenka" 無添加 refers to organic Uni that has been processed in a natural way and does not include any chemicals. The majority of the Uni that we consume has been treated with alum (a preservative) in order to keep its shape and to aid in its preservation. This is the case regardless of where the Uni originates. You won't be able to enjoy the unadulterated flavor of Uni unless it is of the AAA quality because only that grade can keep its shape without the use of additives (unless it is stored in salt water).

Every morning, our staff carefully evaluates the available trays of Uni to select the Uni that matches the exact specifications and quality of your order. Each Uni tray is carefully chosen by our Uni processor in Hokkaido and delivered directly to your doorstep in the U.S.

How to store Uni: Keep it chilled in the refrigerator, NOT the freezer. They are delivered fresh & chilled.
