What is Ni-Anago?

Ni-Anago is simmered sea eel (Anago / 穴子) — a refined Japanese delicacy with a subtle, rich taste and delicate texture that sets it apart from freshwater Unagi. Unlike Unagi, which is grilled and glazed, Anago is traditionally simmered (ni) in a light dashi-based sauce, highlighting its natural sweetness and producing an almost cloud-like tenderness.

This 1kg large pack comes pre-sauced with a high-quality savory sauce, ready to warm and serve. Slightly warming the sauce before drizzling enhances the flavors. A staple at Tokyo's finest sushi counters, Ni-Anago is the more refined, less fatty alternative to Unagi — and equally satisfying.

How to Enjoy

Thaw in the refrigerator. Warm gently in a pan or microwave. Serve as nigiri, on rice (anago-don), or as a topping for chirashi. Warm the sauce separately and drizzle over just before serving for best results.

Pairs well with: warm junmai sake, or a light, earthy pinot noir.
