Tontoro, also known as pork neck or pork jowl, is one of the most prized cuts in Japanese cuisine. Often served grilled or pan-seared, its melt-in-your-mouth quality makes it a favorite in yakiniku and izakaya-style cooking.

Pan-searing with salt
Stir-fry or shogayaki

I like this cut of pork - good ratio of fat to meat. I usually marinate this for several days in a mixture of yellow/white miso, sake, mirin and sugar before broiling.
Unlike other store bought pork bellies, this does not have a peculiar smell, so it is not necessary to spice it up. I usually enjoy the original taste of ingredients in cooking so this is important. The only complaint, small one, is that i need to slice them for storage before freezing again. Excellent product. I think an American store sells the same meat (Regalis Foods), but this is not always available.
