What is Aori-Ika?
Aori-ika (アオリイカ, bigfin reef squid) is considered the pinnacle of squid in Japanese cuisine, prized for its clean appearance and elegant umami. This one comes fresh — never frozen — from the set nets of Nanao in Ishikawa, a coastal region known for clean waters and delicate seafood. The flesh has a translucent, almost glass-like sheen, a thick, satisfying texture, and a delicate sweetness that builds as you chew.

Its naturally elastic flesh gives a refined bite, both chewy and tender, which is why it's a standout in high-end sushi restaurants. Each piece runs about 2.0–2.5 lbs and ships fresh, on a rolling pre-order basis, for sashimi and sushi at their purest.

How to enjoy

Sashimi: The best way to taste its purity — sliced thin, or scored fine for the classic squid-sashimi texture.
Sushi or nigiri: Over rice, with wasabi or a leaf of shiso.
Carpaccio: Thin slices with citrus, olive oil, and salt.
Salt-grilled: Grilled lightly to bring out the natural sweetness.

Pairing notes — wasabi and soy, sudachi or citrus, shiso, sea salt, and a dry sake.

Handling: Ships fresh and never frozen. Keep cold and use raw preparations within a day of arrival. Fresh aori-ika is highly seasonal and limited, so it's pre-order only, harvested and shipped to order on a rolling basis with overnight delivery. Any transit damage should be reported to the carrier directly.
