What is Hiramasa?
Hiramasa (平政, yellowtail kingfish) is a Japanese yellowtail used widely in sushi and sashimi. The flavor is clean and buttery, and the flesh is firm yet tender. It's a different fish from Hamachi (the more common yellowtail): Hiramasa is firmer and leaner, holding its shape well when sliced, which is why many sushi chefs use it when they want a cleaner bite.
This is a whole fish of about 10 lbs — enough for restaurant service or a home cook breaking down a full side for sashimi, sushi, and grilling.

How to enjoy
Hiramasa is at its best raw — sliced for sashimi or pressed onto sushi, where its firm texture and clean, buttery flavor come through. It also takes well to a light sear or the grill, and the collar and belly are good grilled with salt. As a whole fish, it gives you several cuts from one order: lean back loin for sashimi, fattier belly, and trim for cooking.
