AAA Uni: Market Graded and Auction-Based
AAA Uni, also known as Gokujo Uni, is sourced through daily auctions held at the fish market. Each morning, more than a thousand trays of Uni arrive at the market, where official auctioneers inspect and grade them based on their condition at that specific moment. Grades can range from AAA, AA, A+, A, down to regular.
However, since these Uni are graded on the spot, the quality may vary depending on weather, season, region, and daily conditions. While AAA Uni is the highest rank available at market, it’s still subject to fluctuations in consistency.
Kaneshin Uni: Hand-Picked and Specification-Based
In contrast, Kaneshin Uni based on Sapporo is not quite auction-based. It is produced to exact specifications by selecting only high-quality Uni through a careful, hand-picking process. This method ensures greater consistency and a more stable, refined product, as only the best Uni are chosen specifically for this brand.

Kaneshin Uni is offered in three color-coded boxes—each representing a different type of Uni:
Black Kaneshin Box:
Bafun Uni – Bold, rich flavor with a creamy texture. Available year-round.
White Kaneshin Box:
Murasaki Uni – Mild and elegant, with a subtle sweetness. Limited availability depending on the season.
Red Kaneshin Box:
Rishiri Uni – A rare summer delicacy with deep umami from the pristine waters of Rishiri Island. Available only in summer.
