Last summer, I had the chance to visit Mr. Ichikawa, the head of Ichikawa Suisan. We were guided throught the facility where produces teh finest Uni in Hokkaido and amazing quality and dedication to create Aka Rishiri Uni - Santoku.  



I also had a chance to sit down with Mr. Ichikawa - COO of the factory and then we had a long conversation about the future of Hokkaido Uni. The reality is, many Hokkaido Uni factories are shrinking as domestic wholesalers continue to drive prices down, squeezing the local producers. This price war has made it difficult for small Uni producers to survive, and the system is becoming unsustainable.

That’s why we made a decision—Hokkaido Uni Shop will purchase directly from Ichikawa Suisan and help build the Aka-Rishiri SanToku Uni brand outside of Japan. By working directly with the source, we can ensure fair pricing for producers, sustainable practices, and the highest quality Uni for our customers.
